Production: Kale is a dark-green, leafy, cruciferous vegetable that grows in a wide range of temperatures and thrives in wintertime. It can survive temperatures as low as -15 degrees.
Qualities: It is a natural source of protein and dietary fiber and an abundant source of many health-promoting compounds and trace minerals such as folate, phosphorus, calcium, iron, manganese, copper, tryptophan, potassium, magnesium, vitamins A, B, C, E, and K. Kale contains nearly twice the amount of vitamin K as most of its fellow cruciferous vegetables.
Common Use: Kale powder is a fine, green powder, with a mild and pleasant taste and can be added in smoothies or baked goods to add both a green color and nutritional density. It is an excellent way to increase your daily dark leafy greens intake.
